EVT Group's Rydges Sydney Airport is seeking an experienced Cocktail Bartender to join Cloud 9 Rooftop Bar and Smithy's Bar. You will mix cocktails with flair, deliver memorable service, and engage with guests in a fast-paced hotel environment.

Rotating across outlets, you’ll showcase product knowledge, work early mornings and late nights to suit airport traffic, and contribute to an upbeat Daymaker culture that values hospitality and attention to detail.

Qualifications

• 1–2 years in a similar restaurant, hotel or bar.
• Good knowledge of beverages and cocktails, from classics to complex.
• Personable and able to work in a busy environment.
• Excellent communication, teamwork and attention to detail.
• Willing to rotate across outlets and work early mornings or late nights.

Responsibilities

• Maintain grooming and a clean, safe work environment in line with hotel standards.
• Deliver exceptional food and beverage service while adhering to all operational, safety, and hygiene procedures.
• Demonstrate strong product knowledge and comply with all preparation and dispensing standards.
• Complete opening, closing, and cashiering duties accurately and efficiently.
• Participate in all required training sessions to continuously improve service and product knowledge.
• Collaborate effectively with team members and assist other departments as needed to ensure smooth operations.

About the Role

We are looking for an experienced Cocktail Bartender to join the team at Rydges Sydney Airport, working at Cloud 9 Rooftop Bar. A passion for shaking cocktails and love of delivering service with flair and personality is a must.

Located on the hotel’s rooftop level, with access to an outdoor terrace, Cloud 9 Rooftop Bar offers guests spectacular views across the airport runway, Port Botany, and the Sydney city skyline.

Up here, you’ll discover an intimate setting with an impressive collection of wines, spirits, champagnes, and an assortment of sweet and savoury delights. Our signature cocktails inspired by Native Australian ingredients are unparalleled. This role is perfect for someone who thrives moving between two distinct bar environments and takes pride in their mixology skills, product knowledge, and ability to engage with a diverse, ever-changing clientele.

Skills & Experience

• 1 - 2 years of experience working in a similar restaurant, hotel or bar environment.
• Experience making cocktails with a good knowledge of all things beverage related from the classics to more complex and sophisticated.
• Personable, enjoy working in a busy environment and engaging with guests.
• Good communication, a team player and attention to detail.
• Adaptable and the ability to multi-task and anticipate the guests' needs, including early mornings, late nights and shift work to suit airport traffic.
• Enjoy working in a hotel environment and have the flexibility to rotate across Smithy's Bar and Cloud 9 Rooftop Bar, and support other outlets as needed.
