Job summary

Arc @ UNSW is seeking a casual Chef de Partie to support the CANTEEN / Student Catering operation on the UNSW Kensington Campus. You’ll assist with bulk cooking, supervise other cooks, and help ensure meals are prepared to high standards for students.

The role suits a Chef with 3+ years’ experience in bulk cooking, strong knife skills, and a focus on food safety. Casual hours are roughly 7:00am–5:00pm, Monday to Friday during UNSW Term, with a rate of $36.81 per hour.

Qualifications

  • Certificate III in commercial cookery or similar.
  • 3+ years as Chef de Partie or similar.
  • Experience in bulk-cooking environments (banqueting, large buffets).
  • Excellent knife skills and task efficiency.
  • Ability to coordinate, train and supervise in a commercial kitchen.
  • Knowledge of current food trends and best practice.
  • Seasonal menu planning with budget awareness.
  • Experience filling kitchen documentation (temperature logs, cleaning schedules).
  • Current Food Safety Supervisors Certificate.
  • HACCP or similar experience.

Responsibilities

AboutThe Role

The position of Chef de Partie is accountable for supporting the management of the CANTEEN / Student Catering operation and the day-to-day running of the kitchen. From this kitchen, CANTEEN delivers a subsidised catering service for students on the UNSW campus, where students can reliably access a nutritious meal for $5. CANTEEN’S vision is to be resourceful, think outside of the box and aim to use creativity to be able to affect the community we serve as much as possible, both in volume and quantity.

The role supports the coordination of food preparation, service, and stock-taking, as well as guiding other cooks to complete their tasks effectively and efficiently. CANTEEN needs someone familiar with bulk cooking. Production, buffet or banqueting experience is also highly regarded. This position is suited to a chef who can follow recipes accurately, work efficiently in a fast-paced environment, confidently oversee and instruct other cooks to complete tasks safely, able to follow a standard and be open to constant growth, improvement as well as being able to maintain a friendly and welcoming environment.

Key Tasks & Responsibilities
  • Bulk cooking rotating weekly menus.

Ensure a high-quality standard of food is prepared and maintained in accordance with health and safety regulations.

Have a complete understanding of Food Safety legislative requirements and manage food Safety in accordance with these requirements.

Fill temperature logs, cleaning schedules and other forms as required by the food safety plan.

Assist the efficient and accurate administration of stock and portion control.

Participate and be part of the creation of creative seasonal menu inspiration and input in consultation with the Food & Beverage Manager to best serve students.

Ensure proper storage of perishables and stock rotation.

Ensure all kitchen areas are maintained in a clean, tidy and safe manner.

Support and coach casual Food & Beverage Attendants in correct portioning, meal presentation, and efficient service expectations.

Ability to identify, prioritise and implement cost effective solutions, respecting Arc’s status as a not-for-profit organisation.

Selection Criteria
  • Certificate III in commercial cookery or similar
  • 3+ years of experience as a Chef de Partie or similar positions
  • Demonstrated experience in a bulk-cooking environment, such as banqueting, catering, large buffets or large kitchen operations
  • Great knife skills and efficient with tasks
  • Demonstrated ability to coordinate, train and supervise others in a commercial kitchen environment
  • Knowledge of current food trends, innovation and best practice
  • Seasonal menu planning and understanding of budget constraints
  • Demonstrated experience at filling kitchen documentation as required, including temperature logs, cleaning schedules and other forms as required by the food safety plan

Current Food Safety Supervisors Certificate.

HACCP or similar experience.

What We Can Offer You

This is a casual position with hours between 7:00am and 5:00pm, Monday to Friday during UNSW Term. We anticipate roster hours to be approximately maximum 38 hours of work per week, however, we are open to considering candidates seeking minimum 24hrs per Week.

A casual hourly rate of $36.81/ hr
