Job summary

Arc @ UNSW is seeking a casual Chef de Partie to support the CANTEEN / Student Catering operation on the UNSW Kensington Campus. You’ll assist with bulk cooking, supervise other cooks, and help ensure meals are prepared to high standards for students.

The role suits a Chef with 3+ years’ experience in bulk cooking, strong knife skills, and a focus on food safety. Casual hours are roughly 7:00am–5:00pm, Monday to Friday during UNSW Term, with a rate of $36.81 per hour.

Qualifications

• Certificate III in commercial cookery or similar.
• 3+ years as Chef de Partie or similar.
• Experience in bulk-cooking environments (banqueting, large buffets).
• Excellent knife skills and task efficiency.
• Ability to coordinate, train and supervise in a commercial kitchen.
• Knowledge of current food trends and best practice.
• Seasonal menu planning with budget awareness.
• Experience filling kitchen documentation (temperature logs, cleaning schedules).
• Current Food Safety Supervisors Certificate.
• HACCP or similar experience.

Responsibilities

• Bulk cooking with rotating weekly menus.
• Ensure high-quality food in line with health and safety regulations.
• Maintain food safety logs and temperature records.
• Assist stock control and portion control.
• Contribute to seasonal menu ideas with the Food & Beverage Manager.
• Ensure proper storage and stock rotation.
• Keep kitchen areas clean, tidy and safe.
• Coach casual Food & Beverage Attendants in portions and presentation.
• Identify cost-effective solutions respecting Arc as not-for-profit.
