About the Role

Buds Tavern is a busy coastal gastro pub located in the heart of Huskisson, NSW, offering a modern Australian menu across breakfast, lunch and dinner service. We are seeking a qualified and experienced Chef de Partie to join our kitchen team on a full-time basis.

The role involves food preparation, cooking and managing an allocated kitchen section while maintaining high standards of food quality, presentation, hygiene and food safety. The successful candidate will work closely with the Head Chef and wider kitchen team to ensure efficient and consistent kitchen operations.

Key Responsibilities

The successful candidate will be responsible for, but not limited to:

  • Prepare and cook a range of breakfast and other menu dishes in accordance with established recipes and kitchen standards.
  • Manage and operate an allocated kitchen section during preparation and service periods.
  • Complete mise en place and ensure ingredients, equipment and workstations are ready for service.
  • Monitor cooking times, temperatures, portion sizes and presentation to maintain consistent food quality.
  • Prepare and present dishes according to menu specifications and established standards.
  • Assist with the preparation and development of seasonal menu items and daily specials.
  • Assist with ordering, receiving and storing food supplies and maintain appropriate stock levels.
  • Monitor stock rotation and minimise food wastage through appropriate preparation and storage practices.
  • Maintain high standards of food hygiene, cleanliness and food safety throughout the kitchen.
  • Ensure kitchen equipment, utensils and work areas are cleaned, maintained and safely operated.
  • Assist with training and supporting junior kitchen staff where required.
Skills and Experience Required
  • Relevant formal cookery qualification, such as Certificate III in Commercial Cookery or an equivalent recognised qualification.
  • Minimum 2 years' relevant professional experience in a commercial kitchen.
  • Demonstrated experience working as a Chef de Partie or in a comparable chef position.
  • Experience preparing and cooking breakfast, brunch and modern Australian cuisine.
  • Strong knowledge of food preparation, cooking techniques and kitchen operations.
  • Ability to manage an allocated kitchen section effectively during busy service periods.
  • Sound knowledge of food safety, hygiene and workplace health and safety requirements.
  • Strong communication, teamwork and organisational skills.
  • Ability to work effectively in a fast-paced professional kitchen environment.
