Song Hotel Sydney seeks an experienced Chef de Partie to join our kitchen team at Song Kitchen, contributing to high-quality dishes across breakfast, dinner and catering for a purpose-driven environment.

You will lead a kitchen section, ensure food safety, collaborate with the Chef de Cuisine on menu development, mentor junior staff, and help manage costs while delivering exceptional guest experiences in a charity-forward hotel.

Qualifications

  • Experience preparing high-quality food across breakfast, dinner and catering services.

About this opportunity

As a Chef de Partie, you will play an important role in supporting our kitchen operations and delivering high-quality food experiences for our guests. You will work closely with the culinary team to ensure food is prepared to the highest standards while maintaining consistency, quality, and efficiency.

Key duties and reasonability are:

  • Plan, prepare, and cook high-quality dishes for breakfast and dinner services in accordance with menu standards and guest expectations.
  • Manage and oversee the assigned kitchen section, ensuring all food preparation, cooking, and presentation are completed to the highest possible standard.
  • Collaborate with the Chef de Cuisine and kitchen team to develop menus, introduce new dishes, and improve food presentation techniques.
  • Assist with menu planning, food preparation requirements, and estimating food and labour costs to support efficient kitchen operations.
  • Monitor the quality, consistency, and presentation of dishes throughout all stages of preparation and service.
  • Ensure all meals are prepared and delivered in a timely manner while maintaining high standards of taste, appearance, and portion control.
  • Prepare and cook a variety of dishes across different cuisines, including grill, sauté, and preparation station duties during busy service periods.
  • Maintain strict compliance with food safety, hygiene, and workplace health and safety regulations across all food storage and preparation areas.
  • Ensure proper handling, storage, preservation, and preparation of food products in accordance with industry standards.
  • Work closely with kitchen and front-of-house teams to address food preparation requirements and ensure smooth service delivery.
  • Provide guidance, demonstrate cooking techniques, and support the training and development of junior kitchen staff.
  • Assist with selecting and training kitchen staff when required.
  • Maintain a clean, organised, and efficient workstation at all times.
  • Support kitchen operations during high-volume services, special functions, and events.
  • Adapt to changing service requirements and contribute positively within a diverse and fast-paced kitchen environment.
  • Work independently and collaboratively as part of a professional culinary team.
  • Perform additional duties and responsibilities as directed by the Manager or Chef de Cuisine.
To thrive in this role, you will bring:
  • A Certificate III in Commercial Cookery, or equivalent experience in a professional kitchen environment.
  • 1 to 3 years' experience in a Chef de Partie or similar culinary role.
  • The ability to respond professionally to customer feedback and use insights to continuously improve service delivery.
  • Experience preparing high-quality food across breakfast, dinner and catering services.
  • Strong knowledge of food preparation techniques, food safety, hygiene requirements and workplace health and safety standards.
  • Well-developed communication and teamwork skills, with the ability to collaborate effectively across kitchen and operational teams.
  • A positive, approachable and supportive style that contributes to an inclusive team culture.
  • A proactive and self-motivated approach, with a commitment to achieving high standards.
  • Strong attention to detail and a focus on continuous improvement.
