Job summary

Samar & Taj Pty Ltd Trading As Pavilion Kalkallo in Melbourne is seeking a trade qualified Chef on a full-time basis. You will lead a busy kitchen, supervise staff and run daily operations to deliver high-quality dishes.

Responsibilities include menu planning, estimating food and labour costs, ordering supplies, ensuring hygiene, and training staff. Experience in Modern Australian, Italian and Western cuisine is preferred.

Qualifications

• Strong stock and cost control required.
• Must have two years post-qualification experience.
• Certificate IV in Culinary or Hospitality Management (Commercial Cookery) required.
• Ability to lead a kitchen and work under pressure.

Responsibilities

• Plan menus and estimate food and labour costs.
• Monitor quality of dishes at all stages of preparation and presentation.
• Discuss issues with Managers and staff; train and supervise staff.
• Prepare and cook food; maintain hygiene regulations; manage shifts.

Job description

We are growing and require a trade qualified Chef on full-time basis. If you love working in the kitchen this is an opportunity to join a friendly team of passionate people who loves cooking and food.

As a Chef you will be responsible for managing team of kitchen staff and managing the kitchen operations.

DUTIES AND RESPONSIBILITIES:

• Planning menus, estimating food and labour costs, and ordering food supplies
• Monitoring quality of dishes at all stages of preparation and presentation
• Discussing food preparation issues with Managers, Dietitians, kitchen and waiting staff
• Demonstrating techniques and advising on cooking procedures
• Preparing and cooking food
• Explaining and enforcing hygiene regulations
• Select and train staff
• Freeze and preserve foods
• Ordering the stock required for the kitchen.
• Supervising the kitchen staff to ensure superior product standards.
• Effecting shift planning and management
• Managing daily kitchen operations and preparation

SKILLS AND QUALIFICATIONS RERQUIRED:

• Strong stock and cost control
• Minimum Two years post qualification experience in relevant field
• Min Certificate IV in relevant field such as Culinary, Hospitality Management (including Commercial Cookery)
• Good time management
• Experience in cooking Modern Australian cuisine, Italian and Western cuisine
• Professional leadership
• Ability to work under pressure at a fast pace
• Restaurant chef experience is preferable
