Job summary

BelgraviaPRO on South Stradbroke Island is seeking a dynamic Chef to deliver an exceptional modern menu at our Café and function complex. The role requires leadership of the cafe team through large dinner services and events, while delivering excellent service to public, families and function clients.

Join a flexible, full-time operation with opportunities across barista and bar duties, and contribute to a diverse range of clientele in a stunning island setting.

Qualifications

• Minimum 2 years of experience in a similar hospitality facility.
• Completed traineeship as qualified cook.
• Strong communication skills up and down the line.
• Experience in large group catering up to 120pax.
• Knowledge of kitchen health and safety legislation.
• National Police Check, CPR certificate and First Aid certificate (Level 2).

Responsibilities

• Maintains a clean sanitised operation and food safety program.
• Coordinates food stock ordering, holding, prep and storage across areas.
• Prepares food to standard recipes and portion controls.
• Minimises wastage of products and utilities.
• Manages equipment maintenance to regulatory standards.
• Maintains stock levels to meet forecasted operations.
• Creates specialty dishes using slow-moving stocks.
• Assists with groups and larger bookings; liaises with 3rd party caterers when needed.
• Attends internal meetings and client site visits as required.

A fantastic opportunity exists for the right candidate to manage the hospitality at beautiful South Stradbroke Island campground.

The Role

With the continued growth in business, an exciting opportunity has arisen for a suitably qualified and experienced Chef to deliver an exceptional modern food menu to public, families and functions at our Café and function complex.

We are looking for an all-rounder who is customer-focused, adaptable to our diverse range of clientele and committed to driving sales. Ability to lead our café team through large dinner services and functions, to engage our regular customers and work across other areas (barista and bar work) is desirable.

Key Accountabilities

• Maintains a clean sanitised operation + food safety program
• Coordinates the ordering, holding, preparation and storage of food stock in dry, fresh, refrigerated, and frozen spaces
• Prepares food to standard recipe and portion controls that meet the company standards
• Ensures wastage of all product and utilities is always minimised
• Coordinates the use and maintenance of all equipment to regulatory standards
• Ensures all stock levels are appropriately maintained to meet the level of forecasted operations
• Creates specialty dishes from time to time, by utilising slow moving stocks or excess items
• Assists Management with groups, larger bookings. communicates with 3rd party contractor caterers to use facilities, when the operations are unable to deliver such an event
• Attends internal meetings and client site visits where necessary

Essential Skills and Qualifications:

• Energetic and passionate about our goals
• A minimum 2 years’ experience working in a similar hospitality facility
• Completed traineeship as qualified cook
• Highly developed communication skills both up and down the line
• Experience in large group catering up to 120pax
• Sound knowledge of kitchen health and safety legislation
• National Police Check
• Current CPR Certificate
• Current First Aid Certificate (Level 2)
• Worked in an environment of being in charge and responsible for outcomes
• Worked in fast paced environment
• Ability to apply oneself during slower periods and contribute across other departments within the facility (for efficiency)
