Job summary

BelgraviaPRO on South Stradbroke Island seeks a hands-on Chef to deliver a modern food menu at the Café and function complex. Lead the cafe team through dinner services and events, with scope across barista and bar duties to engage regular guests and diverse clients.

The ideal candidate has 2+ years in hospitality, a cook traineeship, strong food safety knowledge, and current CPR/First Aid plus police check.

Qualifications

• Minimum 2 years experience in a similar hospitality facility.
• Completed traineeship as qualified cook.
• Strong communication skills and ability to work across teams.
• Sound knowledge of kitchen health and safety legislation.
• National Police Check, CPR and First Aid certificates current.

Responsibilities

• Maintains a clean sanitised operation and food safety program.
• Coordinates the ordering, holding, preparation and storage of food stock across dry, fresh, refrigerated and frozen spaces.
• Prepares food to standard recipe and portion controls.
• Ensures wastage and utility use are minimised.
• Coordinates use and maintenance of equipment to regulatory standards.
• Maintains stock levels to meet forecasted operations.
• Creates specialty dishes using slow moving or excess items.
• Assists with groups and larger bookings; communicates with third party caterers as needed.
• Attends internal meetings and client site visits.

A fantastic opportunity exists for the right candidate to manage the hospitality at beautiful South Stradbroke Island campground.

The Role

With the continued growth in business, an exciting opportunity has arisen for a suitably qualified and experienced Chef to deliver an exceptional modern food menu to public, families and functions at our Café and function complex.

We are looking for an all-rounder who is customer-focused, adaptable to our diverse range of clientele and committed to driving sales. Ability to lead our café team through large dinner services and functions, to engage our regular customers and work across other areas (barista and bar work) is desirable.

Key Accountabilities

• Maintains a clean sanitised operation + food safety program
• Coordinates the ordering, holding, preparation and storage of food stock in dry, fresh, refrigerated, and frozen spaces
• Prepares food to standard recipe and portion controls that meet the company standards
• Ensures wastage of all product and utilities is always minimised
• Coordinates the use and maintenance of all equipment to regulatory standards
• Ensures all stock levels are appropriately maintained to meet the level of forecasted operations
• Creates specialty dishes from time to time, by utilising slow moving stocks or excess items
• Assists Management with groups, larger bookings. communicates with 3rd party contractor caterers to use facilities, when the operations are unable to deliver such an event
• Attends internal meetings and client site visits where necessary

Essential Skills and Qualifications:

• Energetic and passionate about our goals
• A minimum 2 years' experience working in a similar hospitality facility
• Completed traineeship as qualified cook
• Highly developed communication skills both up and down the line
• Experience in large group catering up to 120pax
• Sound knowledge of kitchen health and safety legislation
• National Police Check
• Current CPR Certificate
• Current First Aid Certificate (Level 2)

• Ability to apply oneself during slower periods and contribute across other departments within the facility (for efficiency)
