Job summary

Pan Pacific Melbourne is seeking a Chef de Partie to lead breakfast preparation and presentation for our guests. You will work with Sous Chefs and the Executive Chef to ensure top-quality, safe, and appealing breakfast service.

The ideal candidate has 5-star hotel experience, relevant Cookery certification (Certificate III or equivalent), and strong knowledge of contemporary kitchen practices. Flexibility to work weekends and public holidays is essential.

Qualifications

• Experience in a 5-star hotel or high-end dining environment.
• Relevant Cookery qualification (Certificate III or equivalent) and HACCP/food-safety training.
• Strong knowledge of contemporary kitchen practices; high attention to detail.

Responsibilities

• Oversee buffet breakfast preparation, presentation, and replenishment to maintain quality.
• Monitor buffet service to ensure freshness and full stock during breakfast hours.
• Collaborate with kitchen team to deliver efficient breakfast service.
• Maintain clean, organized work area and proper equipment use.
• Manage food preparation, portion control, stock rotation, and waste reduction.
• Prepare hot and cold breakfast items, including eggs, bakery, and specials.
• Adhere to all food safety, hygiene, and HACCP standards.
• Support culinary team to meet hotel quality and guest satisfaction.
• Assist in training and mentoring junior kitchen staff.
• Contribute ideas for seasonal menu and buffet presentation improvements.
