Job summary

The Bonobo by Raes in Byron Bay is seeking an experienced Restaurant Manager to oversee daily restaurant operations, including In-Room Dining services, while actively participating in service.

You will lead and train the team, manage rosters, stock control, maintain food safety and WHS standards, and collaborate with kitchen and hotel management to deliver exceptional guest experiences.

Qualifications

• Proven experience as a Restaurant Manager or in a similar hospitality management role.
• Strong experience in floor service and team leadership.
• Excellent rostering, organisational and communication skills.
• Experience with stock management, ordering and stock counts.
• Strong problem-solving skills and ability to work under pressure.
• Knowledge of food safety, hygiene and WHS requirements.
• Hands-on, proactive approach to hospitality and guest service.
• RSA certification.
• Availability to work weekends, evenings and public holidays as required.

Responsibilities

• Manage daily restaurant operations and oversee In-Room Dining services, ensuring exceptional guest service.
• Lead, supervise, train and motivate the team.
• Create and manage staff rosters according to business needs.
• Be hands-on during service, including serving tables and assisting the team.
• Assist with ordering and stock control.
• Complete opening, closing and end-of-day procedures and reports.
• Manage guest feedback and resolve complaints professionally.
• Coordinate with kitchen staff to ensure smooth and timely service.
• Monitor cleanliness, presentation, food safety and WHS standards.
• Monitor sales, wastage and operational performance.
• Work closely with the wider hotel management team to maintain Raes service standards.
