Job summary

Compass Group Pty Limited is seeking Senior Line Chefs to join our remote-site operations in Central Queensland. Earn a base salary of $102,013 per year plus Super, with accommodation and meals provided.

Roles offer 14 days on/7 days off, with drive in/drive out or fly in/fly out from Mackay or Brisbane. Successful candidates will work in bulk catering environments, ensuring OH&S, HACCP compliance and high food hygiene standards.

Qualifications

• Chef qualifications / Cert III in Commercial Cookery.
• Experience in bulk catering environments.
• Excellent knowledge of kitchen procedures and operations.
• Experience in menu writing, rostering and cost control.
• Experience with hygienic work practices and HACCP guidelines.
• Must be able to pass a Pre-employment medical and Drug and Alcohol Test.
• Standard 11 Certificate (Desirable).

Responsibilities

• Collaborate with a team of Chefs, Kitchen Utilities and Dining Room staff.
• Buffet style bulk cooking for Breakfast, Crib, Lunch, Dinner and Desserts.
• Ensure OH&S compliance and safe food handling procedures.
• Ensure catering controls are in place and wastage is minimized.
• Maintain high standards of food hygiene, safety and Compass standards.

Senior Line Chef positions

ESS provides multi-service capability to major companies and organisations operating in remote sites, gold mines and coal fields. We provide vital workplace support for people working in some of the most isolated terrains in the world, from oil rigs in the North Sea to gold mines in the Australian Outback. Due to anticipated growth across our flagship portfolio in Central QLD, we have exciting opportunities for experienced Senior Line Chefs interested in joining the remote sector, working 14:7 rosters (2 weeks on, 1 week off).

The Positions

• Work collaboratively with a team of Chefs, Kitchen Utilities and Dining Room employees
• Buffet style bulk cooking for Breakfast, Crib, Lunch, and / or Dinner and Desserts
• Ensure OH&S compliance, adhering to safe work practices and food handling procedures
• Ensure all catering controls are in place, and wastage is kept to a minimum
• Maintain high standards of food hygiene, safety, infection control and cleanliness in accordance with Compass standards

The Person

• Chef Qualifications / Cert III in Commercial Cookery
• Experience within bulk catering environments
• Excellent knowledge of all kitchen procedures and operations

• Experience with hygienic work practices and appropriate HACCP guidelines
