Job summary

IHG Hotels & Resorts' InterContinental Sydney Coogee Beach is seeking a Bar Manager to lead Shutters Restaurant & Bar and Rick Stein at Coogee Beach. You will inspire a high-performing team, ensure premium beverage experiences, and uphold service standards in a luxury coastal setting.

You will manage wine service and cellar operations, set rosters, monitor labour and stock, drive sales through guest engagement and promotions, and coach staff to deliver memorable moments in line with brand

Qualifications

• Experience leading bar operations in a luxury or fine-dining environment.
• Strong knowledge of wine, beverage pairings and cellar management.
• Proven ability to recruit, train and develop a high-performing bar team.

Responsibilities

• Lead day-to-day bar operations, ensuring service excellence and presentation.
• Oversee wine service, pairing recommendations and sommelier duties.
• Set and manage rosters, control labour costs and payroll.
• Drive beverage sales through guest engagement, promotions and events.
• Maintain stock, conduct regular audits and ensure safety and compliance.
