InterContinental Sydney Coogee Beach is seeking an Assistant Restaurant Manager to support the restaurant service operation for Shutters Restaurant & Bar, in-room dining, and the pool bar. You will lead a team to deliver a warm, seamless guest experience, manage staffing, and uphold standards across all dining venues.

Ideal candidates have 1–2 years in high-end hospitality, strong F&B knowledge, and a collaborative leadership style.

Qualifications

• Must have full work rights in Australia (no sponsorship)
• 1–2 years of leadership experience in high-end or fine dining
• Strong understanding of food & beverage operations and Guest focus
• Confident, collaborative leader who can motivate a team
• Vibrant personality with passion for hospitality
• Calm under pressure with strong problem-solving skills
• Proficient in POS systems and restaurant management software
• Wine knowledge (WSET Level 2 desirable) and cocktail basics
• Exceptional communication and interpersonal skills

Guests enjoy immersive coastal dining experiences celebrating seasonal local produce, setting a new benchmark for luxury hospitality in Australia.

We are seeking a passionate and experienced Assistant Restaurant Manager to support the restaurant service operation and help guide our team to success in our main restaurant, Shutters Restaurant & Bar (open for breakfast, lunch and dinner), in-room dining and in our fabulous, brand-new pool bar.

The role and key duties:

• Deliver a warm, personalised, and seamless guest experience from arrival to departure.

• Build strong relationships with regular guests and the local community to drive loyalty and repeat visitation.

• Support the Restaurant Manager in leading, training, and mentoring the team to uphold service excellence.

• Ensure compliance with health, safety, and hygiene standards, as well as internal policies and procedures.

• Assist with rostering, inventory management, and cost control to support operational efficiency and profitability.

• Identify and act on opportunities to upsell products and experiences that enhance the guest journey.

• Champion a culture of continuous improvement, coaching the team to maintain high standards in service and presentation.

Essential criteria required to be considered:

• Must have full work rights in Australia (kindly note that sponsorship is not available for this role)

• Minimum 1-2 years of leadership experience in high-end or fine dining establishments.

• A strong understanding of food and beverage operations, with a desire to grow and develop in this space.

• A confident nature and collaborative style, with the ability to motivate and inspire a team.

• A vibrant, guest-focused personality with a genuine passion for hospitality.

• Calm under pressure, with excellent problem-solving and conflict resolution skills.

• Proficiency in POS systems and restaurant management software.

• Sound knowledge of wine (WSET Level 2 desirable) and classic cocktails.

• Exceptional communication and interpersonal skills.
