Job summary

Frenchies Bakery And Patisserie Pty Ltd in Sydney is seeking a skilled Baker for a full-time position. You will be responsible for end-to-end production of authentic French breads, pastries, and baked goods, ensuring high quality and food safety in line with Australian regulations.

Qualifications

• Minimum 2 years’ post-qualification experience as a Baker in a commercial bakery or similar high-volume environment.
• Formal qualification in baking or patisserie (e.g. Certificate III in Patisserie or equivalent).
• Demonstrated expertise in French pastry techniques, including sourdough, laminated doughs, and artisan breads.

Responsibilities

• Prepare and mix doughs for breads, rolls, croissants, baguettes, and other French pastries.
• Weigh, measure and check ingredients according to recipes and food safety standards.
• Knead, ferment, cut, mould, shape and prove dough and pastry goods; manage fermentation times.
• Operate commercial baking equipment including deck, rack and convection ovens to ensure consistent product quality.
• Maintain cleanliness of equipment and bakery premises in line with HACCP and safety regulations.
• Monitor stock levels of flour, yeast, dairy and other supplies; assist with ordering and inventory.
• May assist with training and supervising junior baking staff in techniques and safety standards.

We are a boutique French bakery in Sydney seeking a skilled Baker to join our team on a full-time basis.

About the Role

You will be responsible for the end-to-end production of authentic French breads, pastries, and baked goods, maintaining high standards of quality, consistency, and food safety in line with Australian regulations.

Key Duties and Responsibilities

• Prepare and mix doughs for breads, rolls, croissants, baguettes, and other French pastry products using traditional and modern techniques.
• Weigh, measure, and check the quality ingredients in accordance with recipes and food safety standards
• Knead, ferment, cut, mould, shape, and prove dough and pastry goods, managing fermentation times
• Operate commercial baking equipment including deck, rack, and convection ovens to ensure consistent product quality.
• Maintain cleanliness of equipment, work areas, and bakery premises in compliance with occupational health and safety and food hygiene regulations (HACCP).
• Empty, clean, and help with light maintenance of baking trays, tins, and other cooking equipment and machinery
• Monitor stock levels of flour, yeast, dairy, and other baking supplies; assist with ordering and inventory management liaising with your superiors and co-workers
• May assist with training and supervising junior baking staff in techniques, procedures, and safety standards.

Requirements

• Minimum 2 years’ post-qualification experience as a Baker in a commercial bakery or similar high-volume environment.
• Relevant formal qualification in baking or pastry arts (e.g. Certificate III in Patisserie or equivalent overseas qualification assessed as comparable).
• Demonstrated expertise and previous experience in French baking techniques, including sourdough, laminated doughs, and artisan breads.
• Strong understanding of food safety, hygiene, and workplace health and safety standards in Australia.
• Ability to work early morning shifts, weekends, and public holidays as required in a fast-paced bakery environment.
• Good communication skills and ability to work effectively within a team.
