• Maintain staff morale and team cohesion through positive, productive leadership, and actively seek ways to develop and retain team members.
• Ensure clear and comprehensive shift handovers occur
• Maintain accurate statistical records and reporting, and control departmental expenses within set targets
• Cultivate a sales culture, implementing and tracking up-selling and on-selling strategies
• Ensure full compliance with licensing laws, RSA requirements, and health & safety standards
• Uphold QT and Parlour's grooming, presentation, and service-style standards
• Actively participate in team briefings, training sessions, and operational meetings

What You’ll Bring

• 2+ years' experience in an Assistant Restaurant Manager role or similar within high-volume, premium hospitality venues (hotel experience a plus, not essential).


• Proven ability to deliver a high-level guest experience that exceeds expectations for VIP clientele and hotel guests.


• Experience assisting in the management of medium-sized restaurant teams, with a focus on developing and training staff.


• A passion for wine and beverage, with the confidence to lead tastings, pairings, and guest-facing storytelling.


• Understanding of budget management, cost control, and P&L analysis to support data-driven decision-making.
