InterContinental Sydney Coogee Beach seeks an Assistant Restaurant Manager to support the main restaurant, Shutters Restaurant & Bar, as well as in-room dining and the pool bar. You will lead service teams, uphold standards, and ensure guest satisfaction across breakfast, lunch and dinner service.

The role requires 1–2 years of leadership in fine dining, strong understanding of F&B operations, and a collaborative, guest-focused mindset.

InterContinental Sydney Coogee Beach is perfectly positioned on Sydney's iconic beachfront featuring 198 elegantly designed rooms and suites, many with uninterrupted ocean views, alongside an ocean-facing infinity pool, luxury cabanas, and a vibrant leisure deck. We are seeking a passionate and experienced Assistant Restaurant Manager to support the restaurant service operation and help guide our team to success in our main restaurant, Shutters Restaurant & Bar (open for breakfast, lunch and dinner), in-room dining and in our fabulous, brand-new pool bar.

The role and key duties:

• Deliver a warm, personalised, and seamless guest experience from arrival to departure.


• Build strong relationships with regular guests and the local community to drive loyalty and repeat visitation.


• Support the Restaurant Manager in leading, training, and mentoring the team to uphold service excellence.


• Ensure compliance with health, safety, and hygiene standards, as well as internal policies and procedures.


• Assist with rostering, inventory management, and cost control to support operational efficiency and profitability.


• Identify and act on opportunities to upsell products and experiences that enhance the guest journey.


• Champion a culture of continuous improvement, coaching the team to maintain high standards in service and presentation.

Essential criteria required to be considered:

• Must have full work rights in Australia (kindly note that sponsorship is not available for this role)


• Minimum 1-2 years of leadership experience in high-end or fine dining establishments.


• A strong understanding of food and beverage operations, with a desire to grow and develop in this space.


• A confident nature and collaborative style, with the ability to motivate and inspire a team.


• A vibrant, guest-focused personality with a genuine passion for hospitality.


• Calm under pressure, with excellent problem-solving and conflict resolution skills.


• Proficiency in POS systems and restaurant management software.


• Sound knowledge of wine (WSET Level 2 desirable) and classic cocktails.


• Exceptional communication and interpersonal skills.
