Job summary

Bacar, a premium dining destination within the Accor Sydney Olympic Park precinct, is seeking an Assistant Restaurant & Bar Manager. You will lead on-floor operations, drive service excellence, guest satisfaction and team performance across daily service and major events.

You’ll mentor staff, manage rosters and labour, collaborate with the Culinary Team, and contribute to revenue growth while upholding Heartist values and LQA standards.

Qualifications

• Minimum 2 years leadership experience in a hotel restaurant or similar environment.
• RSA certification (Current RSA).
• Confident hands-on leader with strong communication under pressure.
• Highly organised with attention to detail and consistency.
• Sound understanding of POS systems and rosters, wage control and reporting.

Responsibilities

• Lead service operations across breakfast, lunch and peak event periods.
• Elevate guest experience and review scores through proactive engagement and recovery.
• Engage VIPs and Accor members with personalised recognition and loyalty experiences.
• Grow revenue per seat through upselling and beverage storytelling.
• Mentor team and drive a high-performance culture aligned with standards.
• roster, forecast and manage labour to match occupancy and event demand.
• Collaborate with Culinary Team to ensure smooth service and product knowledge.
• Monitor financial performance: average checks, revenue, COGS and labour percentage.
• Assist with monthly reporting and ensure hygiene and stock control compliance.
