Accor's Pullman at Sydney Olympic Park seeks an Assistant Restaurant & Bar Manager to drive service excellence across breakfast, lunch and major events, mentoring a high-performance team and upholding Heartist values.

You’ll oversee rosters, labour costs and collaborate with the Culinary Team to ensure compliance with hygiene, RSA and stock controls while delivering memorable guest experiences.

Qualifications

• Minimum 2 years leadership experience in hotel restaurant or similar environment.
• Current RSA
• Confident hands on leader with strong communication and can maintain professionalism under pressure.
• Highly organised with strong attention to detail and commitment to consistency.
• Solid understanding of food safety and guest-focused mindset.
• Experience with rosters, wage control and reporting.

Responsabilités

• Lead service operations across breakfast, lunch and peak event periods, ensuring seamless execution even under pressure.
• Elevate guest experience by improving scores through proactive engagement and service recovery.
• Engage VIPs and Accor members with personalised recognition and loyalty-driven experiences.
• Grow revenue per seat through upselling and beverage storytelling.
• Inspire and mentor your team, fostering a high-performance culture aligned with Heartist values.
• Roster, forecast and manage labour to align with occupancy and event demand.
• Collaborate with Culinary Team for smooth service flow and product knowledge.
• Monitor financial performance and assist with monthly reporting.
• Champion hygiene, RSA, stock control and equipment care.

Bacar is a premium dining destination within Pullman at Sydney Olympic Park, known for sophisticated service, thoughtful cuisine and a strong beverage identity. As our Assistant Restaurant & Bar Manager, you’ll be the on floor leader who drives service excellence, guest satisfaction and team performance across daily operations and major event days.

What you’ll be doing:

• Lead service operations across breakfast, lunch and peak event periods, ensuring seamless execution even under pressure
• Elevate guest experience by lifting RPS, Google and TripAdvisor scores through proactive engagement and service recovery.
• Engage VIPs and Accor members with personalised recognition and loyalty‑driven experiences.
• Grow revenue per seat through structured upselling, beverage storytelling and strategic recommendations.
• Inspire and mentor your team, fostering a high‑performance culture aligned with LQA standards and Heartist values.
• Roster, forecast and manage labour, ensuring staffing is aligned with hotel occupancy and event demand
• Collaborate strongly with the Culinary Team to maintain smooth service flow and strong product knowledge.
• Monitor financial performance, including average checks, revenue, COGS awareness and labour percentage. Assist with monthly reporting.
• Champion compliance and standards across hygiene, RSA, stock control and equipment care

Qualifications

• Minimum 2 years leadership experience working in a hotel restaurant or similar environment
• Current RSA
• Confident hands on leader with strong communication skills and can maintain professionalism under pressure
• Highly organised and has a strong attention to detail and commitment to consistency
• Sound understanding of POS systems and is capable with rosters, wage control and reporting
• High presentation standards
• Strong understanding of food safety and solid knowledge of food and beverage with a guest focused mindset
• Comfortable with the physical aspects of the job such as prolonged standing and walking, carrying, lifting, pushing and pulling
• Flexibility to work a variety of shifts such as early mornings, late nights, weekends, public holidays and major event days
• Have full working rights in Australia
