Job summary

Mandarin Oriental Downtown Dubai is seeking a Stewarding Supervisor to oversee stewarding operations, lead a diverse team, and ensure top-tier cleanliness, safety, and equipment care across back-of-house areas.

The role requires a degree or higher National Diploma in hospitality or related field, with at least 2 years in stewarding supervision within a luxury hotel, and experience in the Middle East. Dubai-based, full-time position with focus on cost efficiency and regulatory compliance.

Qualifications

• Degree or Higher National Diploma in Hospitality, Hotel, or Business Management is preferred; high school qualification is the minimum requirement.
• Minimum of 2 years' experience in a stewarding supervisory role, within a five-star luxury hotel is essential.
• Experience working in the Middle East (UAE, Bahrain, Saudi Arabia, Qatar) or other GCC country.
• Demonstrated ability to inspire and assist large, multicultural teams while ensuring service excellence and operational efficiency.
• Strong organizational skills with the ability to handle complex tasks and coordinate events in line with hotel standards.

Responsibilities

• Assist the Back of House Assistant Manager in stewarding operations including scheduling and coordination.
• Supervise stewarding team activities such as dishwashing, waste disposal and cleanliness maintenance.
• Manage stock, inventory, and chemical usage to support cost-efficiency and reduce loss.
• Contribute to safety and hygiene by reporting incidents and supporting HACCP/FS compliance.
• Attend meetings and support other duties as delegated by management.

Job description

Based at the Mandarin Oriental Downtown Dubai within the Stewarding Department in Dubai, the Stewarding Supervisor is responsible for overseeing stewarding operations, leading the team to maintain high standards of cleanliness, hygiene, and equipment care across all back-of-house areas while ensuring compliance with safety regulations and supporting efficient high-quality service delivery. The Stewarding Supervisor reports to the Assistant Manager of Back of House.

As a Stewarding Supervisor you will be responsible for the following duties

Assist the Back of House Assistant Manager in all aspects of stewarding operations including scheduling, inter-departmental coordination, personnel performance, and maintaining high cleanliness standards in all back-of-house areas.

Supervise stewarding team operations such as dishwashing, waste disposal and maintenance of cleanliness and hygiene ensuring adherence to operational standards and proper equipment functioning.

Manage stock and inventory of operating equipment and supplies, control chemical usage, and contribute to cost-efficiency and reduction of breakage or loss within stewarding.

Contribute to safety, health and environmental standards by reporting incidents, supporting pest control measures, and participating in HACCP and FLHSSE compliance activities.

Perform regular walkthroughs, attend meetings, support last-minute RB amp E requirements, and carry out any other duties as delegated by the Back of House Assistant Manager or the Director of Back of House.

As a Stewarding Supervisor, we expect from you:
