Job summary

Sunset Hospitality Group seeks an experienced Assistant Bar Manager for AURA - SKYPOOL in Dubai. You will lead daily bar operations, develop a high-performing team, and drive quality, cost control, and guest experiences in a premium beverage environment.

In this role you will collaborate with the Chef and management on seasonal beverage programs, manage costs, and ensure compliance with health and safety regulations. A launch-ready, engaging atmosphere is essential to success.

Qualifications

• Minimum 3 years' proven experience as a supervisor within a luxury lifestyle dining, upscale restaurant, beach club, or nightlife venue.
• Experience managing high-volume premium beverage operations.
• Strong knowledge of classic cocktails, premium spirits, wine, champagne, and contemporary mixology trends.
• Demonstrated leadership in developing, coaching, and motivating bar teams.
• Strong commercial acumen with beverage cost, inventory, and profitability.

Responsibilities

• Lead the daily bar operations, ensuring exceptional service and memorable guest experiences.
• Develop, train, and inspire a high-performing bar team while maintaining the highest service standards.
• Drive beverage quality, consistency, profitability, and operational excellence.
• Collaborate with the Executive Chef and management on seasonal beverage programs and guest experiences.
• Monitor beverage costs, inventory, stock control, and waste minimization.
• Ensure compliance with company standards, health & safety regulations, and licensing requirements.
• Support the pre-opening of the venue, ensuring bar operations are prepared for launch.
• Assist in developing bar SOPs, service standards, and operational workflows.
• Support beverage menu development, cocktail testing, and recipe standardization.
• Build strong relationships with guests and create an engaging, energetic atmosphere.
• Support recruitment, training, and launch of the venue.
