Job summary

Daikan Hospitality Group is seeking a roaming Pit Master to oversee grilled food standards across its outlets in the UAE. You will master robata, open-fire, charcoal grilling, and Josper ovens, develop grill specials, train kitchen teams, and control yields and costs.

A valid UAE driving licence and own car are required for travel between branches. Reporting to the Executive Chef, you will ensure HACCP and food safety compliance, maintain plating standards, and support peak service periods with

Qualifications

• Culinary diploma or equivalent qualification is an advantage.
• Minimum 6 years of kitchen experience, including 3 years as a Grill Chef, Robata Specialist, or Pit Master.
• Mastery of robata, open-fire, charcoal grilling, and Josper ovens is mandatory.
• Valid Dubai Municipality or ADAFSA food safety certificate.
• Valid UAE driving licence and own car are mandatory.
• Must be physically fit, able to train staff, communicate in English, and work flexible shifts across Dubai and Abu Dhabi.

Responsibilities

• Master robata, charcoal grills, open-fire cooking, and Josper ovens, ensuring consistent quality during service.
• Develop grill recipes and specials, maintain plating standards, and conduct quality checks across all outlets.
• Manage meat and seafood preparation, portioning, yields, wastage, and charcoal usage to control costs.
• Ensure safe grill operations, proper equipment maintenance, and compliance with HACCP, Dubai Municipality, and ADAFSA standards.
• Train grill teams, assess staff skills, support peak service periods, and travel between branches according to schedule.
