Job summary

The St. Regis Abu Dhabi seeks a dedicated commis to join our luxury kitchen team. You will assist in food preparation, uphold stringent recipes, and support junior talent while maintaining a spotless station and strict safety practices.

With responsibilities across opening/closing routines, waste reduction, and timely production, you’ll contribute to delivering impeccable experiences in a renowned five-star setting on Corniche. Prior luxury-hotel experience is preferred.

Qualifications

• Should demonstrate initiative at all times and a strong desire to improve skills and knowledge.
• A Commis 1 & 2 should be able to produce own work in accordance with deadlines and seek solutions to minor obstacles.

Responsibilities

• Review daily production sheets with chef de partie or sous chef as needed.
• Prepare and delegate production of food items per standards to ensure uninterrupted guest service.
• Participate in culinary training of junior talent and apprentices.
• Adhere to standardized recipes to maintain consistency and quality.
• Keep station clean and organized, including fridges, freezers, counters and stoves.
• Ensure opening/closing procedures are carried out to standard.
• Minimize over-production and food waste; rotate, label, and store food properly.
• Operate kitchen equipment safely at all times.
• Handle, store, prepare and serve food safely per hotel and gov’t guidelines.
• Report deficiencies in equipment or product quality promptly.
• Follow safety regulations and maintain a clean, safe work environment.
• Log information in kitchen log book and brief on new happenings.
