Job summary

InterContinental Dubai Marina Hotel & Residences is seeking a Commis II (Butchery) to support the culinary team in a fast-paced luxury kitchen. You will assist with meat prep, mise en place, and ensure HACCP standards are followed while maintaining cleanliness and food safety.

Ideal candidates have prior commis chef experience in a hotel or restaurant, a passion for quality, teamwork, and a willingness to learn from senior chefs within a renowned five-star setting.

Qualifications

• Minimum experience as a commis chef in a hotel/restaurant setting.
• Strong understanding of food safety and hygiene practices.

Responsibilities

• Support the Culinary team in preparing exceptional dishes, from setting up food and equipment to assisting with mise en place to ensure everything runs like clockwork.
• Assist with the preparation, trimming, cutting, deboning, and portioning of meat, poultry, and other butchery products according to kitchen requirements and established standards.
• Ensure all meat products are properly handled, labelled, stored, and maintained at the correct temperature, following HACCP and food safety standards at all times.
• Play a key role in food pick-up, ensuring efficiency and quality while strictly following HACCP standards to maintain the highest level of food safety.
• Provide assistance to the Demi Chef De Parties and Chef De Parties in day-to-day operations, learning from experienced chefs and contributing to a smooth kitchen operation.
• Maintain butchery equipment, tools, and workstations in a clean, hygienic, and safe condition, ensuring proper cleaning and sanitization after use.
• Monitor the quality and freshness of meat products and report any concerns regarding quality, storage, or stock levels to the relevant chef.
• Keep the kitchen and butchery area organized and safe by maintaining cleanliness and adhering to food safety regulations.
• Be part of an exciting and fast-paced kitchen, where your work directly contributes to the creation of delicious, world-class dishes.
