Job summary

InterContinental Dubai Marina Hotel & Residences is seeking a Commis II (Butchery) to support a dynamic culinary team in a luxury hotel environment. You will help with meat prep, mise en place, and adherence to HACCP standards, contributing to high-quality, safe dishes daily.

You will learn from experienced chefs, maintain hygiene and proper storage, and grow in a fast-paced kitchen that delivers world-class dining experiences.

Qualifications

• Previous experience as a commis chef in a hotel or restaurant setting.
• Strong understanding of food safety and hygiene practices.
• Passionate about food and cooking with a willingness to learn.
• Ability to work well in a team and communicate effectively.

Responsibilities

• Support the Culinary team in preparing dishes and setting up for service.
• Assist with preparation, trimming, deboning, and portioning of meat, poultry, and other butchery products.
• Ensure meat products are properly handled, labelled, stored and kept at correct temperatures in line with HACCP standards.
• Play a key role in food pick-up, ensuring efficiency and quality while following HACCP standards.
• Provide assistance to senior chefs in day-to-day operations and learning on the job.
• Maintain butchery equipment and workstations, ensuring cleanliness and sanitization after use.
• Monitor quality and freshness of meat products and report concerns to the chef.
• Keep the kitchen and butchery area organized and safe by maintaining cleanliness.
• Be part of a fast-paced kitchen where your work contributes to world-class dishes.
