Job summary

DELANO Dubai is seeking a seasoned culinary professional to help lead high-end kitchen operations. You will collaborate with the Sous Chef and Chef de Cuisine to ensure exceptional dish execution, standards, and teamwork across service periods.

You will mentor junior staff, maintain HACCP compliance, and contribute to menu tastings and seasonal updates in a fast-paced luxury environment.

Qualifications

• Previous experience as a Junior Sous Chef or strong Chef de Partie in luxury hospitality.
• Solid culinary knowledge and technical cooking skills.
• Experience supervising and developing junior culinary staff.
• Solid HACCP, food safety and kitchen hygiene understanding.
• Strong organizational and time-management abilities.
• Calm, solutions-focused in fast-paced kitchens.
• Passion for contemporary hospitality and quality ingredients.
• Professional culinary qualification or certification preferred.

Responsibilities

• Support the preparation and execution of high-quality dishes, ensuring consistency in taste, presentation, and portions.
• Assist the Sous Chef in leading daily kitchen operations and guiding junior cooks.
• Coordinate preparation and service within assigned sections for smooth high-volume service.
• Monitor food quality and presentation, taking action when standards are not met.
• Coach junior chefs and foster continuous learning and skill development.
• Ensure HACCP, hygiene and sanitation standards across the kitchen.
• Assist with inventory, portion control, stock rotation and waste reduction.
• Support menu execution, recipe standards, tastings and seasonal updates.
• Collaborate with culinary, stewarding and service teams for a seamless guest experience.
• Step in for senior leaders when needed to maintain service flow and standards.
