The Luxury Collection in Ajman is seeking a Hygiene and Food Safety Operations Manager to ensure compliance with hygiene standards across hotel operations. He/she will lead training, monitor practices, and advise on risk areas to prevent issues in food handling and labeling requirements.

The role requires strong knowledge of health regulations, experience in hotel F&B, and the ability to implement corrective actions while maintaining brand standards and service excellence.

Qualifications

• Must have a high school diploma or GED with 4 years of experience in food and beverage, culinary, or related professional area.
• Alternatively, a 2-year degree with 2 years of relevant experience in food and beverage, culinary, or related area.
• Preferred: Environmental Health Degree or Culinary Degree.

Responsabilités

• Verifies compliance with Brand Standard Audit (BSA) requirements of Marriott International throughout the operations.
• Advises and monitors food handlers on proper good handling practices and verifies observance.
• Identifies key risk areas in various food operations and takes preemptive remedial action.
• Verifies compliance with food and hygiene regulations, licensing conditions and codes of practice relating to food operations.
• Provides technical advice on product labeling to fulfill government requirements.
• Provides in-house food hygiene training for all good handlers, e.g. new hires and trainees.
• Handles complaints or inquiries from customers and local health departments on food hygiene matters.
• Conducts and records daily kitchen inspections on personal, environmental and food hygiene conditions and provides corrective action plans.

Formation

High school diploma or GED

2-year degree from an accredited university in Hotel and Restaurant Management, Hospitality, Business Administration, or related major

Environmental Health Degree or Culinary Degree
