Job summary

Fairmont Ajman is seeking a Hygiene Officer responsible for monitoring and maintaining food safety, hygiene, sanitation and health standards across the hotel, ensuring UAE regulatory compliance and Accor/Fairmont brand standards. You will conduct inspections, supervise food-handling practices, maintain records and guide colleagues to foster a strong culture of food safety.

Reporting to the Executive Chef and Quality Assurance team, you will coordinate with culinary, stewarding and engineering

Qualifications

• Diploma or degree in Food Safety, Environmental Health, Hospitality Management, or a related field.
• Prior hygiene/food safety experience in hotels or F&B environments preferred.
• Knowledge of HACCP principles and local UAE regulations.
• Good command of English, both written and spoken.

Responsibilities

• Conduct regular hygiene inspections of kitchens, restaurants, storage areas, and related spaces.
• Monitor food handling, storage, cooking, and holding practices to ensure safety.
• Verify temperatures and maintain accurate temperature and cleaning records.
• Provide guidance and training on hygiene practices to colleagues.
• Prepare and maintain hygiene documentation and reports.
• Support internal and external audits and implement corrective actions.
