Job summary

FZN, Dubai’s three-Michelin-star restaurant, seeks a senior sommelier to curate a world-class wine list and lead the wine program. You will design pairings, train the team, and manage supplier relationships to ensure profitability and exceptional guest experiences.

You will collaborate with the Executive Chef on beverage programming and participate in tastings and media opportunities, upholding safety and regulatory standards in wine service.

Qualifications

• Extensive sommelier experience in luxury fine-dining environments.
• Deep knowledge of global wine regions, producers and vintages.
• Proven ability to train and mentor a somm-team.
• Excellent communication and storytelling for guests.
• Strong understanding of wine inventory management and cost control.
• Experience handling VIP guests with discretion and grace.

Responsibilities

• Curate and manage wine list and cellar to reflect restaurant identity.
• Design and execute wine pairings that complement tasting menu.
• Lead, train, and mentor the sommelier and service team in wine knowledge and service excellence.
• Manage supplier relationships, purchasing, and cost controls to maintain profitability.
• Engage guests with expert recommendations to elevate the dining experience.
• Uphold regulatory and safety standards related to wine service and storage.
• Collaborate with Executive Chef on menu development and beverage programming.
• Represent FZN at tastings, trade events, and media opportunities.
