Job summary

Minor International is seeking a seasoned culinary manager for Anantara Mina Al Arab Ras Al Khaimah Resort to develop menus, uphold quality standards, and lead a high-performing kitchen team. The role requires strong leadership, 3+ years in culinary management, and expertise across cuisines.

The incumbent will ensure food safety, drive cost controls, and maintain equipment while delivering exceptional guest experiences in a luxury hotel setting.

Qualifications

• Bachelor/college degree in hotel management or culinary field.
• Minimum 3 years of culinary management experience.
• Experience training teams for large quantity food preparation.
• Excellent knowledge of quality food operations.
• Strong leadership and teamwork.
• Attention to detail for operational excellence.
• Excellent guest service skills.
• Expertise in all types of cuisine.

Responsibilities

• Develop menus and specials meeting target market and operating concept.
• Set standard recipes to control food cost and meet guest expectations.
• Uphold fire, hygiene and safety policies.
• Maintain kitchen equipment to a high standard with minimal breakage.
• Lead HACCP and Dubai Municipality audit readiness.
• Check incoming produce against orders and specs.
• Maximize colleague productivity and maintain discipline per hotel guidelines.
• Follow Anantara presentation guidelines for consistent culinary quality.
• Suggest improvements to presentation guidelines and offerings.
• Maintain food safety and sanitation practices in all outlets.
• Oversee asset management of outlet property and facilities.
