Job summary

Grand Plaza Mövenpick Media City in Dubai is seeking a detail-oriented Demi Chef de Partie (Cold Kitchen) to join our culinary team. You will work under the Chef de Partie to prepare cold dishes, salads, and charcuterie while maintaining your station, inventory and food safety standards.

You will execute precise knife cuts, monitor quality, assist with menu development and mentor junior staff as needed in a fast-paced, upscale environment.

Qualifications

• Proven experience in a professional cold kitchen or garde manger.
• Strong knowledge of cold food preparation, salads and charcuterie.
• Excellent knife skills and ability to work under pressure.
• Solid understanding of food safety, sanitation and hygiene.
• Team player with good communication and time management.
• Experience in fine dining or upscale environments is a plus.

Responsibilities

• Prepare cold dishes, salads, appetizers and charcuterie to recipes.
• Maintain and organize the cold kitchen station and inventory.
• Execute precise knife cuts and plating for consistent quality.
• Monitor temperature and freshness; discard items not meeting standards.
• Assist in menu development and seasonal specials for cold kitchen.
• Collaborate with kitchen team for smooth workflow during peaks.
• Follow all hygiene regulations and FIFO for ingredients.
• Support training of junior staff and communicate stock needs.
• Maintain accurate inventory records and organize supplies.
• Adapt to changing priorities while ensuring detail-focused execution.
