Job summary

AccorHotels Middle East in Dubai seeks a detail-oriented Demi Chef de Partie (Cold Kitchen) to join our culinary team. You will prepare cold dishes, manage inventory, and ensure all food safety protocols are followed while delivering exceptional dining experiences for guests.

You will support the Chef de Partie in training junior staff and contribute to menu development, maintaining station organization and high-quality plating during service.

Qualifications

• Proven experience in a professional cold kitchen or garde manger.
• Strong knowledge of cold food preparation, salads, and charcuterie.
• Excellent knife skills and proficiency with kitchen tools.
• Solid understanding of food safety, sanitation, and hygiene standards.
• Able to work under pressure while maintaining quality.
• Good organizational and time management abilities.
• Teamwork and clear communication with the kitchen staff.
• Stamina to stand long hours and perform repetitive tasks.
• Attention to detail for consistent plating and presentation.
• Ability to follow recipes and instructions precisely.

Responsibilities

• Prepare cold dishes, salads, appetizers, and charcuterie per recipes and plating standards.
• Maintain and organize the cold kitchen station and store tools and ingredients safely.
• Execute precise knife cuts and techniques for consistency.
• Monitor food quality, temperature, and freshness; discard items not meeting standards.
• Assist in menu development and seasonal cold kitchen specials.
• Collaborate with kitchen team to ensure smooth workflow during peak hours.
• Follow all food safety, sanitation, and hygiene regulations.
• Receive and store ingredients, checking quality and FIFO rotation.
• Support Chef de Partie in training junior staff when required.
• Maintain inventory records and communicate stock needs to management.
