Job summary

Wild Dreams Hospitality in KwaZulu-Natal, Pongola, is seeking an experienced Sous Chef to lead a busy lodge kitchen. The role requires a hands-on leader with strong standards, costing and stock control, who can run a shift and mentor junior staff.

French-speaking candidates will be given first preference. The position is live-in with a salary offer of R30,000, and the ideal candidate will thrive in a remote, fast-paced environment while maintaining high hygiene and safety standards.

Qualifications

• Previous experience as a Sous Chef essential.
• Experience in a large lodge or resort kitchen essential.
• Solid understanding of menu planning, food costing and stock control.
• Strong leadership skills and ability to run a shift independently.

Responsibilities

• Oversee food preparation, quality and plating across the kitchen.
• Support the Head Chef with menu development and daily kitchen operations.
• Manage stock control, ordering and stock rotation.
• Assist with food costing and monitor cost percentages.
• Supervise, train and mentor junior kitchen staff.
• Maintain hygiene and food safety standards throughout service.
• Step in and run the kitchen in the Head Chef's absence.
