Job summary

Pick n Pay Retailers seeks an experienced Bakery Operations Manager to oversee bakery performance across about 20 stores. You will ensure core lines, promotions, and stock availability meet demand and sales targets.

You will lead bakery teams, uphold food safety and quality standards, and drive profitability through cost control and margin optimization. Close collaboration with store teams is essential.

Qualifications

• Grade 12 or equivalent qualification and Qualified Baker certification.
• Minimum 5 years' experience in Bakery Management within a retail environment.
• In-depth knowledge of bakery processes, production planning and operational procedures.
• Strong understanding of retail bakery operations, including product availability, merchandising, quality control and stock management.
• Proficiency in Microsoft Excel for reporting, data analysis and operational tracking.
• Extensive knowledge of food safety, hygiene, and stock rotation principles.
• Experience working with SAP or similar retail management systems.

Responsibilities

• Coordinate and support bakery operations across approximately 20 assigned stores.
• Ensure consistent availability of core bakery lines and promotional products.
• Monitor and guide daily production planning to align with customer demand and sales targets.
• Support Bakery Managers in maintaining efficient production processes and operational consistency across stores.
• Drive availability and presentation of key bakery ranges in line with merchandising standards.
• Ensure promotional lines are executed effectively in stores.
• Monitor in-store displays, product freshness and range assortment to improve customer offering.
• Ensure stores maintain strong visual merchandising standards within the bakery department.
• Ensure compliance with food safety regulations, hygiene standards and company policies.
• Monitor adherence to recipe manuals, portion control standards and production guidelines.
• Conduct operational audits to ensure quality and product consistency across stores.
• Address quality or compliance issues and implement corrective actions.
• Monitor and analyse sales performance, margins, waste and stock levels.
• Support stores in improving profitability through cost management and waste reduction initiatives.
• Guide Bakery Managers on selling price management and margin optimisation.
• Review store performance data to identify opportunities for improvement.
• Monitor stock levels and ordering processes to ensure product availability.
• Support stores in maintaining accurate stock control and stock take processes.
• Ensure appropriate management of raw materials, packaging and supplies.
• Support Bakery Managers with staffing, recruitment and onboarding within bakery.
• Provide training, coaching and mentoring to bakery teams to improve operational capability.
• Assist with performance management and development of bakery staff.
• Promote a culture of customer service, teamwork and operational excellence.
• Conduct regular store visits to review performance and compliance.
• Provide structured feedback and action plans following store visits.
• Monitor implementation of improvements and initiatives.
• Monitor competitor activity, pricing, product trends and promotions.
• Identify opportunities to improve product range, pricing strategies and customer offering.
• Share insights and recommendations with store management and regional leadership.
• Ensure bakery departments deliver high-quality customer experiences through availability, freshness and presentation.
• Respond to customer feedback, complaints and service improvements.
