Capsicum Culinary Studio in Pretoria area seeks a skilled CHEF (GRILLER) to lead the grill station in a luxury hospitality setting. This is a specialist hot-section role for a confident, technically strong grill cook with a passion for meat cookery and the ability to consistently deliver excellent results in a four- to five-star environment.

You will own the grill, ensuring precise temperature control and impeccable portions during peak service.

Qualifications

• Diploma in Culinary Arts or equivalent from a recognised institution.
• Minimum 5 years' experience in a hot section grill role.
• Experience in a four- or five-star environment is essential.
• Strong knowledge of meat cuts and proper cooking methods with precise temperature control.
• Ability to clean, portion and store meat in line with food safety requirements.
• Solid understanding of food hygiene, health and safety/HACCP standards.
• Excellent attention to detail in food quality, presentation and portions.
• Ability to work efficiently under pressure during busy service.

Responsabilités

• Run the grill station to a consistently high standard across all service periods.
• Apply correct cooking methods for beef, chicken and fish.
• Clean, portion and store meat correctly per HACCP requirements.
• Know and apply differences between all meat cuts in preparation and cooking.
• Prepare vegetables for the grill station and minimize wastage.
• Check stock daily and identify prep needs.
• Assist with monthly stock takes.
• Maintain strict hygiene and safety standards across the grill area.
