You will oversee restaurant, bar, kitchen and entertainment operations through department heads, ensure openings are fully prepared, and drive guest experiences and corporate bookings.

In this role you will own the monthly revenue target, budget, and profit, while controlling labour, stock and costs.

Sugar People is a restaurant and lifestyle destination on Vilakazi Street, combining food, premium drinks, entertainment and a vibrant social experience, with around 60 staff and up to 350 covers on a busy day. We need a commercially driven, hands on General Manager who runs the venue as a profitable business, not someone who simply manages shifts.

2. Key responsibilities

Operations

• Lead daily restaurant, bar, kitchen and entertainment operations through the heads of department.
• Make sure the venue opens ready: clean, stocked, staffed and briefed.
• Oversee bookings, VIP experiences, private functions and events.
• Own facilities, maintenance, health and safety, liquor licence conditions and food safety compliance.

Money

• Own the monthly revenue target, the budget and venue profit.
• Sign off the daily cash up. Review sales, banking and POS reconciliations every day.
• Control labour, stock and operating costs. Review voids, comps and stock variances every week.

People

• Lead the heads of department and hold them to their own KPIs.
• Publish the weekly roster. Manage attendance, productivity and monthly one on ones.
• Apply the Staff Handbook and Disciplinary Code fairly and consistently, with HR.

Guests and sales

• Be on the floor during peak trading, resolve complaints and build relationships with regulars, VIPs and corporate clients.
• Grow weekday trading, corporate bookings, groups and functions. Support marketing, events and partnerships.

Stock and procurement

• Make sure all ordering goes through the Procurement and Stores Controller, against par levels and approved suppliers.
• Work with the Head Chef and Bar Manager to hit food and beverage cost targets.
