Job summary

HotelJobs is seeking a Head Chef for a luxury country-style hotel in Pretoria. You will design seasonal menus for a la carte, conferencing, and private functions, while leading a kitchen team and ensuring exemplary guest service.

Responsibilities include full kitchen operations, costing, stock control, and supplier negotiations to protect GP targets. You will also support beverages, wine pairings, and represent the culinary team at events.

Qualifications

Formal culinary qualification required (Diploma/Degree).
Experience as Executive Chef or Head Chef in 4/5-star luxury hotels.
SA ID and strong HACCP health & safety knowledge.
Reside in Pretoria with reliable transport (essential).

Responsibilities

Design and execute seasonal menus for a la carte, conferencing, and private functions.
Full accountability for kitchen operations, including food costing, stock control, and supplier negotiations to maintain GP targets.
Collaborate on beverage programs and assist with wine pairings to elevate guest dining.
Lead, mentor, and train a full kitchen brigade; manage IR and performance processes.
Act as brand ambassador and engage guests at high-profile events.
