Function

Reporting to the Assistant Director of Finance the successful incumbent will take full responsibility for the day-to-day running of Cost Control department which includes Stores and Receiving. Be familiar with Cost throughout the Hotel; recommend and implement measures to control cost in accordance with Marriott International Hotels Policies & Procedures.

Required Experience & Qualifications
  • Minimum of 4 years in a Cost Control or related position
  • Diploma in warehouse management or purchasing management or stock control / stores management or hotel management
  • Previous knowledge of cost control purchasing stores & inventory control in a similar environment
  • Must be able to apply mathematical operations to such tasks as frequency distribution analysis of variances correlation theory sampling theory and factor analysis
  • Previous in depth experience on Materials Control and Micros Symphony or similar systems are essential
  • Flexible working hours
  • Be prepared to perform other duties within the department
  • Team focused and strong team leader
  • Strong management skills and highly analytical

Key Responsibilities
  • Manage Cost Control Stores and Receiving Teams to ensure high levels of staff morale and job satisfaction in order to deliver on company targets
  • Responsible for maintaining and system maintenance on Birchstreet Concept My Micros and Micros Symphony
  • Costing of all recipes according to budgeted COS percentages and calculating potential selling prices
  • Responsible for ensuring correct stock reduction links between Birchstreet and Micros Symphony
  • Responsible for all stocktakes within the Hotel
  • Responsible for input of all stocktake figures and creation of all relevant month end reports
  • Variance analysis of all inventory counts and corrective measures put in place Mid-Month Food and Beverage Flash
  • Variance analysis of actually month COS achieved compared to budgeted COS and corrective action taken
  • Responsible for generation and compilation of Food Cost Reports Beverage Cost Reports Departmental Expense Consumption Reports Spa Cost Reports and Operating Equipment Inventory Reports
  • Ensure that store PARs are maintained and updated quarterly
  • Responsible for balancing all stores at month end or when required
  • Responsible for the monitoring and tracking of all inventory related transactions within the hotel
  • Responsible for daily food flash and weekly expense consumption reports
  • Responsible for ensuring correct stock rotation in all stores and beverage outlets
  • Responsible for Ensuring a high level of hygiene and cleanliness at Receiving and all Stores
  • Ensure correct accounting practices and procedures are maintained in all stores and outlets cost control departments and receiving and correct paper trails are in place
  • Verifying that processes policies and procedures are being adhered to
  • Responsible for internal audits on Cost Control Stores and Receiving implementing and maintaining standard operating procedures
