The Perdeberg Group in Paarl is seeking a skilled Chef de Partie to join a small, high-quality kitchen on a working wine estate. You will prepare seasonally driven dishes that complement the estate’s wine offering, with a hands-on, flexible approach across à la carte and private wine-focused events.

Responsibilities include kitchen section ownership, supporting peak service, menu development, and function support from weddings to corporate tastings, while upholding HACCP and food safety

Formación

• Minimum 2-3 years' experience as a CDP or strong Demi Chef de Partie ready to step up.
• Food safety/hygiene certification required; culinary qualification advantageous.
• Valid driver's license and own reliable transport.
• Willingness to work weekends, public holidays and seasonal peak periods.
• Experience with seasonal, local produce; baking/pastry basics preferred.

• Work across sections and support kitchen team during peak service periods.
• Assist with seasonal menu development, wine-pairing dinners and special offerings.
• Support functions and events, including weddings, tastings and corporate bookings.
• Manage stock rotation, minimise waste and assist with stock takes, deliveries and ordering.
• Maintain food safety and HACCP standards and mentor junior team members.

This role forms part of a small, high-quality kitchen on a working wine estate, preparing consistent, seasonally driven dishes that complement the estate’s wine offering. The role requires a hands-on and flexible approach, contributing to both à la carte service and a variety of private and wine-focused functions.

Responsibilities

• Taking ownership of an assigned kitchen section, including mise en place and consistent execution of dishes to required standards
• Working flexibly across sections and supporting the kitchen team during peak service periods
• Assisting with seasonal menu development, wine-pairing dinners and other special offerings
• Supporting functions and events, including weddings, private tastings and corporate bookings
• Managing stock rotation and control, minimising waste, and assisting with stock takes, deliveries and ordering
• Maintaining strict food safety, hygiene and HACCP standards, and supporting junior kitchen team members where required

Essential qualifications, skills, and experience

• Minimum 2-3 years' experience as a CDP or strong Demi Chef de Partie ready to step up, ideally in a farm-to-table, or estate/winery restaurant environment
• Food safety/hygiene certification required, a Culinary qualification will be advantageous
• Valid driver's license and own reliable transport
• Willingness to work weekends, public holidays and seasonal peak periods
• Experience working with seasonal, local, or farm-sourced produce, and experience with baking/pastry basics is preferred
