Job summary

Omni Dallas Hotel in downtown Dallas is seeking a Sushi Cook 1 to prepare and present sushi dishes to the highest standards. The role demands deep knowledge of traditional and contemporary techniques and the ability to perform in a fast-paced kitchen.

You will work with a culinary team, ensure portion control, monitor temps, and maintain strict sanitation while delivering memorable dining experiences for guests and events.

Qualifications

• Minimum of 2–3 years of experience in an upscale sushi bar environment.
• Collaborate effectively with the culinary team.
• Adhere to food preparation, handling, and correct storage standards.
• Support food and beverage portion control and waste management procedures.
• Maintain coolers, freezers, prep areas, and equipment in compliance with health regulations.
• Apply basic math skills to understand recipes and measurements.
• Must have State of Florida food safety certification.

Responsibilities

• Prepare all items on the prep list according to standard procedures.
• Ensure high quality by inspecting food during prep and service.
• Verify portions, weights, and counts before events or functions.
• Cook and fire all food for service and prepare items for the line.
• Monitor cooking times and temperatures.
• Operate a rice cooker properly and efficiently.
• Specialize in high-end sushi preparation.
• Label and date all food containers and rotate them per standards.
• Maintain a clean, organized work area and comply with health standards.
• Assist with special events and other duties as assigned.
