Job summary

Ro Hyde Park is seeking a highly skilled sushi chef to craft nigiri, sashimi, and signature rolls. You will work at the heart of our sushi bar, take orders from bar and dining room, and customize dishes for dietary needs while engaging warmly with guests.

Advanced knife skills and strong ingredient pairing are essential. Competitive pay + tips, with nights, weekends, and holidays required. Training program provided.

Qualifications

• High school diploma or GED.
• Previous experience in an upscale sushi or Japanese restaurant.
• Valid Food Handling Certification.
• Ability to stand and walk for extended periods and lift up to 25 lbs.
• Must successfully complete Ro's restaurant training program.

Responsibilities

• Make sushi rice with consistent form and texture.
• Cut, slice, and fillet fish to a high standard.
• Prepare nigiri, maki, sashimi, and specialty rolls.
• Plate dishes to established portion and presentation standards.
• Sterilize all tools and equipment before each use.
• Take and relay orders accurately from bar and dining room.
• Accommodate allergy and preference requests.
• Inspect and manage quality of all produce, fish, and proteins.
• Track inventory and place supply orders as needed.
• Report equipment issues to the manager on duty.
