Prime Group seeks a Complex Executive Chef to set the culinary direction for two resorts in Marathon, Florida. You will craft menus that reflect the Florida Keys, lead executive and sous chefs across two kitchens, and manage food cost, purchasing, and waste reduction within brand standards.

In this role you will develop seasonal menus, supervise banquet production at volume, and mentor cooks toward growth while keeping kitchens inspection-ready and costs on target.

Formación

• 10+ years in professional kitchens with 5+ years in executive or multi-outlet leadership.
• Strong menu development and food cost control.
• ServSafe Manager certification or equivalent.
• Experience running banquet production at volume.
• Forecasting and critical thinking with discipline to cost every menu.

Responsabilidades

• Create seasonal menus that reflect place, guests, and brand standards.
• Lead the executive sous chef and sous chef across both kitchens.
• Order and produce to the forecast; own food cost, purchasing, and waste reduction.
• Keep both kitchens food-safe and inspection-ready.
• Build culinary talent and a clear path for cooks to grow.
