Job summary

Prime Group seeks a Complex Director of Food & Beverage to shape dining, bar, and in-room experiences across two resorts in Marathon, FL. You will lead outlet teams, manage budgets, and drive service excellence with healthy margins.

You will partner with culinary leadership on menus and pricing, maintain compliance, and coach F&B managers to elevate guest satisfaction while delivering strong financial results. This executive role reports to the Managing Director.

Qualifications

• 8+ years in resort or full-service F&B leadership.
• 3+ years overseeing multiple outlets with P&L responsibility and proven cost control.
• Experience with Toast point-of-sale systems.
• Forecasting, yield management, and the ability to read outlet P&Ls and build an F&B budget.
• Knowledge of food safety and alcoholic beverage regulations; TIPS or ServSafe Alcohol certification, or ability to obtain within 30 days.
• A coaching leadership style that develops outlet leaders and recognizes people by name.
• Restaurant and bar experience; upscale or full-service resort hospitality experience, Hilton or Marriott preferred.

Responsibilities

• Lead F&B strategy and concepts across two resorts.
• Lead and develop F&B managers and their teams.
• Build the F&B budget and forecast covers, then manage costs to plan.
• Partner with culinary team on menus, pricing, and quality.
• Ensure all outlets are food-safe, compliant, and guest-ready.
