Job summary

ISMIRA Agency is recruiting a Sous Chef for TUI Cruises on a fleet of European river ships. The role supports the Executive Chef, supervises galley operations, and ensures high culinary standards for crew meals and show plates.

The position requires EU-language readiness, calm under pressure, and teamwork within a multinational crew. Seasonal contract 8–10 months with free meals, shared accommodation, medical insurance, and the opportunity to travel through Europe as you work, train, and develop

• Prepare crew meals according to company standards.
• Assist the Executive Chef with training and development of the galley team.
• Prepare show plates and conduct daily menu briefings with the restaurant team.
• Evaluate the galley team and provide feedback to the Executive Chef.

ISMIRA Agency actively recruiting for position SOUS CHEF for TUI Cruises!

TUI River Cruises designed as boutique 'floating hotels' with a maximum of 155-190 guests, offering an intimate and relaxed atmosphere with a focus on immersive destination experiences. TUI Aria - adult only, modern & beautiful river ship, the largest in European fleet.

The Sous Chef is to assist the Executive Chef in the supervision and operation of the galley as set by the rules and regulations of the company.

Duties and Responsibilities

• Relieve the Executive Chef in his absence.
• Deliver professional and courteous service at all designated workstations.
• Maintain thorough knowledge of menus, recipes, and culinary standards.
• Ensure proper mise en place and setup for all meals and services.
• Prepare crew meals according to company standards.
• Assist the Executive Chef with training and development of the galley team.
• Prepare show plates and conduct daily menu briefings with the restaurant team.
• Evaluate the galley team and provide feedback to the Executive Chef, including disciplinary action if necessary.
• Distribute daily recipes and ensure consistency in execution.
• Assist with quality checks, monthly inventories, purchase orders, and delivery controls.
• Manage correct food rotation (FIFO), storage, labeling, and temperature control.
• Address guests’ dietary requirements and provide suitable alternatives.
• Monitor stock handling, reach cost targets, and implement improvements as needed.
• Support and mentor talented crewmembers.
• Ensure onboarding and proper introduction of new team members.
• Maintain cleanliness and hygiene standards front and back of house according to HACCP, including log-keeping.

Requirements

• Age 18+ from EU and also all nationalities we work with
• Experience in Galley operation
• Ship experience preferred
• No visible tattoos = no aggressive tattoos.
• For non-EU candidates, a German Visa D will be required.
• Safety certificates and US Visa are NOT needed.
• Knowledge of English language (B2 level).
• Able to remain calm and effective under pressure.
• Comfortable working in multicultural environments.
• Highly organized, disciplined, and dependable.
