Job summary

Hana Brands is seeking a Temp Sushi and Fresh Foods Chef to work in a live sushi bar, handling sushi rice, fish prep and fresh foods with strict standards. You will work independently, keep costs down, and ensure timely prep during shifts.

Two+ years in food handling or a culinary degree with strong knife skills are required; ServSafe certification is a plus. Hotel accommodations are provided for out-of-town assignments.

Qualifications

• Two or more years of food handling experience, plus either sushi rolling experience or a culinary degree.
• Excellent knife skills with fish for sashimi and nigiri; prep vegetables for sushi.
• Valid food handler's card or ability to obtain before first shift.
• Strong knowledge of food safety regulations and safe handling practices.

Responsibilities

• Expert in cutting, slicing and filleting different types of fish and produce.
• Prepare sushi rice to spec; create rolls per kiosk guidelines.
• Prepare various sushi dishes and other fresh foods per company guidelines.
• Inspect quality of produce and fish; manage waste and costs.
• Maintain clean, safe work environment; greet customers and communicate professionally.
