Job summary

Hana Brands seeks a Temp Sushi and Fresh Foods Chef to expertly cut, fillet fish, and prepare sushi rice to exact specifications. You will create rolls and dishes, maintain high quality, and uphold safety standards in a live, high-volume sushi bar environment.

Transportable experience for temp assignments is valued; travel arrangements are managed, and strong performance may lead toward Franchisee opportunities in Hana Brands’ network.

Qualifications

• Two+ years of food handling experience with sushi or culinary background.
• Excellent knife skills for fish fillets and garnishes.
• Valid food handler's card or able to obtain before first shift.
• Strong knowledge of food safety regulations and practices.
• Ability to communicate in English with customers and teammates.

Responsibilities

• Expert in cutting, slicing and filleting fish, vegetables and produce.
• Prepare sushi rice to spec and roll sushi per kiosk guidelines.
• Produce various sushi dishes following quality, portion, presentation and safety standards.
• Prepare additional fresh foods as needed and maintain cleanliness and sanitation.
• Inspect quality of fruits, vegetables and fish used in dishes.
• Maintain waste control and manage costs to meet kiosk goals.
• Work to par levels and adapt to daily volume to avoid overproduction.
