Qualifications

• Strong sushi and knife skills with knowledge of Japanese culinary principles.
• Detail-oriented with high standards for presentation and quality.
• Reliable and able to work calmly under pressure in a fast-paced kitchen.
• Bilingual candidates strongly encouraged.
• Prior sushi experience preferred.

Responsibilities

• Prepare sushi, sashimi, nigiri, maki, and specialty rolls to Kumori standards.
• Ensure every plate is fresh, beautiful, and consistent.
• Maintain expert knife skills and proper rice handling.
• Follow portion guidelines to support cost control.
• Set up and maintain a clean, stocked, organized sushi station.
• Ensure accuracy, timeliness, and smooth coordination with BOH & FOH teams.
• Follow all food safety, sanitation, labeling, and storage procedures.
• Assist with inventory and report ingredient shortages or quality concerns.
• Minimize waste through proper rotation and handling.
• Maintain professionalism, punctuality, and grooming standards.
• Perform other duties as assigned by management.
