Four Seasons Lanai is seeking a Sushi Sous Chef to lead Sushi Bar, Kitchen and Japanese cuisine operations, ensuring Nobu standards and exceptional guest experiences. This role develops the culinary team and supports kitchen leadership.

Candidates must have legal US work authorization, Hawaii food safety credentials, and experience with Nigiri, Maki, Temaki; ability to stand long hours and handle up to 50 lbs; a passion for quality and guest service.

Qualifications

• Legal work authorization in the United States.
• Hawaii Food Handler's Card and ServSafe required.
• Ability to stand for extended periods and lift up to 50 lbs.

Responsibilities

• Lead Sushi Bar, Kitchen and Japanese Cuisine operations.
• Develop and coach culinary team to deliver high-quality sushi.
• Ensure compliance with Four Seasons, Nobu, and safety standards.
• Monitor inventory, food costs, and menu development.
• Maintain a clean and efficient kitchen aligned with guest needs.
