Four Seasons Lanai is seeking a Sushi Prep Cook IV who shares a passion for excellence, working at Nobu Lanai with stunning ocean views on Lanai. You will prepare menu items per Nobu recipes, manage mise en place, and support kitchen operations.

The role requires legal US work authorization, ability to stand long hours, up to 70 lbs, and Hawaii TB clearance; on-island housing is included and comprehensive benefits with medical, dental, and vision.

Qualifications

• Legal US work authorization required.
• Ability to stand for extended periods and lift up to 70 lbs.
• Hawaii TB clearance and Hawaii Food Handler’s Card/ServSafe are required.

Responsibilities

• Prepare menu items in accordance with Nobu recipes and standards.
• Complete mise en place and manage an assigned kitchen station.
• Assist with vegetable prep, sauces, rice, and fish butchery under senior chefs.
• Prepare food in advance and monitor production to minimize waste.
• Operate and clean kitchen equipment, ensuring food safety and sanitation.
