Job summary

Hana Brands is seeking a Sushi Team Leader to run the kiosk on-site, overseeing daily execution, scheduling, ordering, and ensuring food safety standards.

This hands-on role works alongside the production team, training cooks and developing staff while maintaining quality and customer service.

You will partner with store leadership to optimize operations, control waste, and uphold company recipes and presentation across the sushi lineup.

Qualifications

• 3+ years in food service, including 1+ year leading or supervising others.
• Solid knife skills and consistent portioning; sushi experience preferred but not required.
• Ability to communicate recipes, production guides, and food safety instructions in English.

Responsibilities

• Drive sales through daily operational and marketing execution.
• Manage ordering and inventory to keep the assortment while controlling waste and cost.
• Review production and sales data to adjust production plans.
• Schedule the team and ensure schedule adherence.
• Train and develop Sushi Prep Cooks and Sushi Line Cooks to company standards.
• Coach and evaluate team members on performance and ways of working.
• Recruit and onboard new team members.
• Prepare sushi and ingredient prep to meet quality and safety standards.
• Inspect ingredients and escalate quality concerns to Area Manager.
• Maintain food safety compliance, including temperature control, labeling and sanitation.
• Keep the kiosk clean, organized, stocked, and customer-ready.
• Serve as the point of contact for store partners and customers.
• Report equipment, product quality, or safety concerns and follow through to resolution.
