Momiji Inc. in Salem, Oregon is seeking a hardworking Cook to prepare ingredients and support Sushi Chefs in a fast-paced kitchen. You will follow recipes, label and stock ingredients, and assist with prep, cooking, plating, and sanitation.

The role requires teamwork, reliability, and a strong commitment to food safety standards. Prior kitchen experience is preferred, and we promote from within as we grow.

Qualifications

• Ability to multitask.

• Knowledge of menu and cooking methods such as knives, stove, fryer, steamer and oven.
• Must follow health and safety policies and procedures.
• Ability to function across prep cook, tempura, primary cook, and secondary cook stations.

Responsibilities

• Operate in the kitchen and back of house to prepare food safely and to specs.
• Parboil foods, reduce sauces and begin steps in dishes as needed.
• Ensure ingredients and final products are fresh and complete.
• Follow recipes: measure, weigh and mix ingredients.
• Bake, grill, steam, boil, fry, and chop meats, seafood, fruits, vegetables, and grains.
• Present and garnish dishes for attractive presentation.
• Maintain a clean, safe work environment.
• Assist with stocking, ordering and purchasing ingredients; communicate needs to Head Sushi Chef.
• Report equipment or supply issues to the Head Sushi Chef.
• Handle and store diverse ingredients properly.
• Maintain sanitation and safety standards per regulations.
• Complete prep list tasks to company standards.
• Label, date and stock ingredients for easy access.
• Wash, chop and sort ingredients; ensure high quality.
• Wash dishes, utensils and cookware; manage trash and sanitation.
• Operate fryer following safety procedures.
